Pack this for Lunch: Quick + Easy Salad
I’m that person in the office that rarely goes out for lunch because I have a bagged lunch waiting for me in the fridge. In my packed lunch you can usually find these 2 ingredients: baby arugula and avocado! Now, after starting with those things, anything from there is fair game. I’m always trying to mix it up and throw in new ingredient so I won’t get too bored of eating the same thing for over a month (you know how that goes!). Well, I thought I’d share what I’m eating this month for lunch and maybe inspire someone to create something even tastier than this (and if you do, please share!).
This month, I’m addicted to this not only healthy, but delicious, salad—mixed baby spinach and arugula, avocado, shredded brussels sprouts, and dried cranberries. Since I’ve been down for the count for the past two weeks with a sprained knee, I’ve been trying to stay away from meat since my stomach doesn’t seem to digest it the quickest. Obviously working out is limited too, but I’m hoping to be back at it here soon! With all that said, this salad has really done it for me in terms of still feeling good and quite full after lunch!
Ingredients need:
• Mixed baby spinach and arugula
• Avocado
• Shredded brussels sprouts
• Dried cranberries
• Olive oil and vinegar dressing
Recipe:
This is pretty simple! Place the mixed spinach, arugula, brussels sprouts, and dried cranberries into a container. You can mix the olive oil and vinegar into a smaller container so you can pour it over the salad when ready to eat (this way you’re leaves won’t get too soggy). I usually bring a whole avocado to work and cut it there so it doesn’t go bad. Tip: Bring a sandwich bag with you to work so you can save half of your avocado and leave it in the fridge for the next day. Make sure the half your storing in the sandwich bag is the half with the seed still in it too! This will help it not brown as quickly.
