No-Bake Paleo Protein Bars
Hi guys! I’m so sorry for the late post this week! I was pretty busy this weekend moving into our new place (which I can’t wait to share with you guys!!). This week I’m featuring one my best friends, Chelsea. She’s quite the cook in the kitchen and a couple of weeks ago she shared this no-bake Paleo recipe with me as she tries to undertake a no grain and no sugar diet! After trying these bars I just knew we had to make them and share them on the blog! These bars are an excellent (and much cheaper) source of protein than you might get from any of the protein bars you purchase at the store. In addition, they can fulfill the dietary needs of dairy-free, as well as the Paleo diet.

Ingredients needed:
Recipe adapted from Christina Canters Blog
• 2 cups of mixed cashews and almonds
• 1/4 cup of cranberries
• 1/4 cup of shredded coconut
• 1/2 cup of cacao powder
• 2 tablespoons of chia seeds
• 1/2 cup of protein powder (for dairy free, be sure to use a soy or plant-based protein powder)
• 2 teaspoons of cinnamon
• 1/3 cup of peanut butter
• 1/2 cup of coconut oil
How to:
Step 1: Chop mixed nuts using a food processor or hand chopper. Once finely chopped, pour into bowl.
Step 2: Pour and add all dry ingredients into bowl.
Step 3: Pour melted peanut butter and coconut oil into bowl. If too wet, add more chia seeds; if it’s too dry, add a little bit more coconut oil.
Step 4: Once well mixed, pour mixture into a baking pan. For extra decoration, drizzle melted peanut butter over top the mixture in the pan.
Step 5: Place pan into freezer for about 30 minutes.
Step 6: Once frozen, take pan out of freezer and slice into individual bars.
Step 7: Take a bite and enjoy! Be sure to store these bars in the freezer because they will melt on you!
How delicious does it look?! These bars were my go-to this weekend when we were moving. They gave me an extra kick of energy and it was perfect because I was forever on the go!
