Homemade Chicken Tortilla Soup
I think the cold weather is officially here to stay this time around! Cold weather can only mean one thing—time to cozy on up! B has been begging me to make this crockpot recipe for a while now and share it with you guys, so I thought this weekend would be perfect for it. We originally found this recipe last year to make, and my oh my was it delicious!
*Prep time for this recipe is about 15 minutes. Total cook time in crockpot is 9 hours.
Ingredients needed:
• 3 boneless, skinless chicken breasts
• 1 tsp. of ground cumin
• 1 Red bell pepper
• 1 Yellow onion
• 3 Garlic cloves
• 1/2 Jalapeño pepper
• 3 tbsp. of fresh lime juice
• 5 cups of low-sodium chicken broth
• 1/4 cup of chopped cilantro
• 1 cup of frozen corn
• 2/3 cup of brown rice
• 15 oz. of petite-diced tomatoes
• 15 oz. of black beans
• Salt/Pepper
• 1 avocado (optional–sliced for garnishing)
• Sour Cream (optional–for garnishing)
• Tortilla chips
How to make your homemade soup:
Step 1: Finely chop garlic, onion, red bell pepper, and jalapeno pepper, placing into crockpot along with 1 tsp. of ground cumin.
Step 2: Pour brown rice on top, followed by placing the boneless chicken breasts on top.
Step 3: Next, pour chicken broth and diced tomatoes into crockpot.
Step 4: Cook on low for 8 hours.
Step 5: After 8 hours, shred the chicken by using two forks to pull apart the meat.
Step 6: Pour drained can of black beans and frozen corn into crockpot.
Step 7: Keeping crockpot on low, cook soup for 1 more hour.
Step 8: After 1 hour of cooking, place lime juice and chopped cilantro into soup. Add salt and pepper until desired taste is reached.
Step 9: Serve into bowl. Garnish with avocado, sour cream, tortilla chips, and enjoy!
