Mini Salted Caramel Apple Pies

Hello friends! I’m back! I took a break last week due to B’s big weekend! He ran a full out marathon two Sunday’s ago and boy was I the proudest wife on earth! Anyway, now I’m back and excited to share today’s recipe with you!

I’m honestly not the best baker, but sometimes I surprise myself with the little things I can concoct and bake in the kitchen. Today’s recipe is mini salted caramel apple pies! Oh my gosh yummm!! I have to be honest with you, trying to decorate these little guys was a challenge, but it turned out looking not too bad!

Ingredients needed:
• Pie crust (I purchased the pre-made Pillsbury crust that had 2 pie crusts inside. You will need both. If you’d like to cover the top of the pie instead of doing a lattice pattern, you may need an extra box.)
• 3 Granny Smith apples (peeled and diced)
• 1/3 cup of salted caramel sauce
• 2 teaspoons of all-purpose flour
• 1/4 teaspoon of cinnamon
• 1/4 cup of sugar
• 2 teaspoons of lemon juice
• 1 egg
• Muffin/Cupcake pan
• Cookie cutter (Optional. I used these.)

Recipe:
Step 1:
Peel and dice the Granny Smith apples. Note: Cut your apples very small, like the size of a bean.

Step 2: Mix apples, salted caramel sauce, flour, sugar, cinnamon, and lemon juice into bowl. Set bowl aside.Mini Salted Caramel Apple Pies

Step 3: Now onto your crust! If you are using a regular cupcake/muffin pan, cut each circle out to a 4” diameter. If you are using a mini cupcake/muffin pan, cut each circle out to a 3” diameter. Repeat until exact amount is reached. Preheat oven to 375 degrees.

Step 4: Spray cooking spray onto pan and then place in crust.

Step 5: Fill each cup with the salted caramel apple mixture.

Step 6: Take the remaining pie crust and roll it out using a rolling pin. Once rolled, cut and place your lattice pattern on top of the mini pies. Optional: With the leftover scraps, cut out your cookie cutter shapes and place on top of pies.

Step 7: Lightly brush the top of the mini pies with egg wash and then place pan into oven for about 15 minutes, or until golden brown.

Step 8: Once your perfect level of golden brown has been reached, take pies out and let sit for about 10 minutes.

Step 9: Take the mini pies out of the pan and bon appétit! You can store them in an airtight container for later too!
