Overnight Mango and Coconut Chia Seed Pudding
Happy Monday! If there’s one thing I’m always rushing out the door without, it’s breakfast! Lately, I’ve really been into whipping up a smoothie after my morning workout, but sometimes I’m craving something different. My morning routine can also be really crunched where I don’t even have the time to make that smoothie! So with that being said, I’ve been seeing lots of overnight oats recipes that I thought I’d give them a try!
Ingredients Needed:
• 1 mango—diced
• 5 tsp. of honey
• 1 tsp. of vanilla extract
• 5 tbsp. of coconut flakes
• 6 tbsp. of chia seeds
• 14 oz. of coconut milk
• Pinch of cinnamon (optional)
Recipe:
Step 1: Mix coconut milk, chia seeds, coconut flakes, honey, and vanilla extract into a bowl.
Step 2: Once well mixed, separate into storage jars or containers and let sit in the fridge overnight for 8 hours.
Step 3: After 8 hours, dice up fresh mango and pour them into your chia seed pudding. Top with coconut flakes and a pinch of cinnamon, and it’s ready to go!
With just a little preparation the night before, this Overnight Mango and Coconut Chia Seed Pudding is the perfect breakfast-in-a-jar to grab as you’re walking out the door. While I personally love the mango in them, feel free to mix it up by adding a different fruit of your choice: it will be sure to shine through as well!
