Avocado Chocolate Chip Ice Cream Sandwich
Happy Memorial Day! I hope all of you had a wonderful weekend: I know I sure did! I filled it with lots of sun, the pool, and hanging with family and friends. Since we’re all still celebrating Memorial Day weekend (what’s left of it), I thought I’d bring this delicious recipe to your attention—Avocado Chocolate Chip Ice Cream Sandwich!
I made these yummy snickerdoodle cookies this weekend to accompany this tasty and nutritious ice cream. Yes, it is actually nutritious…it’s made mainly out of bananas and avocado. I originally found this recipe on Lemons and Basil, but wasn’t crazy about the peppermint flavor going with the snickerdoodle cookies. In the end though, I still included it in the recipe for you all because it honestly just depends on your taste and I didn’t want to change the recipe from its overall perfection.
Ingredients needed:
• Snickerdoodle cookies (I used Betty Crocker’s)
• 3 frozen bananas
• 3/4 of a small Haas avocado
• 1 tablespoons of maple syrup
• 1 teaspoons of vanilla
• 1/2 teaspoons of peppermint extract (as mentioned earlier, this is if you would like your ice cream to taste minty!)
• 3 tablespoons of dark chocolate chips
How to make your ice cream sandwich:

Step 1: Once your bananas are frozen, chop them up into small cubes and place them into food processor. Next, put in the avocado, maple syrup, vanilla, and peppermint extract. Process until all ingredients are well mixed and your ice cream is creamy.
Step 2: Pour in your dark chocolate chips and pulse until the chips have been chopped into smaller pieces.
Step 3: Pour your ice cream into a container that is freezer safe and let freeze for about 2 hours.
Step 4: Once ice cream is frozen, scoop it up and place onto your snickerdoodle cookie and make a delicious sandwich!
This recipe was ah-mazing! I wanted to eat the whole thing in one sitting (terrible idea officially being bathing suit season). BUT, you technically could just eat the ice cream because it’s pretty healthy and you won’t feel guilty eating it! Enjoy!!
