Quinoa & Black Bean Salad
Now that the beautiful weather is here to stay, let the delicious light food eating begin! If you love black beans just as much as I do, you’re going to really like this recipe; it’s healthy and light. I am always receiving emails about different things to make in the kitchen, and I recently came across this recipe, which you can find here.
I thought this would be a great idea to make for lunch during my work week. It’s quick and easy, taking just 20 minutes to make. Not only is it great for lunch, but it’s also a delicious recipe you can put together for picnics or cookouts!
Ingredients needed [as taken from link above]:
• 1 Cup of dry quinoa (cook with 2 cups of water and it will create about 3 cups)
• 1 Can of black beans (drained)
• 1 Cup of corn
• 1/2 Cup of chopped cilantro
• 1/3 Cup of feta cheese
• 1/3 Cup of chopped red onions
* You will also need to add a Vinaigrette (can also be found on link above).

This recipe seriously has all of my favorites in it! I don’t know why I didn’t think of it myself! (I might need to add a little avocado and I will be in heaven 😉

Oh my goodness that’s a great idea! Avocado is my all time favorite. I think I’m going to have to do that next time!
